Boti Curry

A robust traditional curry for cooks who value nose-to-tail food traditions.

Method

  1. Clean the boti thoroughly using guidance from a trusted butcher.
  2. Brown onion in oil; add ginger-garlic and cook out the raw aroma.
  3. Add tomato and spices and cook into a thick masala.
  4. Add boti, salt and water. Pressure-cook or simmer until fully tender.
  5. Reduce gravy to your preferred consistency; finish with garam masala and coriander.
Food-safety note: Offal should come from a trusted source and be cleaned and cooked thoroughly.
