Rasam

Peppery, tangy and aromatic—a light broth with enormous regional personality.

Method

  1. Crush cumin, pepper and garlic coarsely.
  2. Simmer tomato, tamarind, turmeric, salt and crushed spices in water for 10 minutes.
  3. Add dal water if using and heat until frothy; avoid a hard boil.
  4. Temper mustard and curry leaves in ghee and pour over.
  5. Finish with coriander.
