Sambar

Lentils, vegetables, tamarind and spice—the everyday backbone of countless South Indian tables.

Method

  1. Pressure-cook dal with turmeric until soft; mash lightly.
  2. Cook vegetables, onion and tomato until almost tender.
  3. Add sambar powder, tamarind, salt and jaggery; simmer 8–10 minutes.
  4. Add cooked dal and water to desired consistency; simmer 5–7 minutes.
  5. Temper mustard, fenugreek, chilli, curry leaves and asafoetida; pour over.
